Serves 2
● 1 red onion, peeled and diced
● 1 large piece of ginger, peeled and chopped
● 2 sticks of celery, diced
● 3 garlic cloves, peeled and diced
● 1 courgette, roughly chopped
● 1 carrot, roughly chopped
● Juice of 1 lime
● 1x 400ml can of coconut milk
● Pinch of salt
● Drizzle of olive oil
Place a large pan over a medium heat and add a drizzle of olive oil. Once warm, add the onion,
garlic, celery, carrot and a pinch of salt. Mix well and cook for 5-10 minutes until soft.
Once soft, add the ginger and courgette, mix well and leave to cook for 5 minutes before adding the coconut milk and lime juice. Leave to simmer for 10-15 minutes until the courgette feels soft.
Once soft, remove from the heat and blend until smooth, you can either use a hand blender or
pour this into a powerful food blender.
Once smooth, pour back into the pan and heat through over a medium heat.
Spoon into bowls and serve with your favourite toppings; we love to serve this soup with some
fresh coriander and a sprinkle of coconut chips.
